Pea Milk

Prep Time: 1 hour (plus overnight soaking)

Servings: 1.3 litres

Ingredients

• 110 g dried yellow split peas
• ½ tsp salt
• 2 - 3 pitted dates
• 1 tbsp neutral oil (e.g., canola or sunflower oil) (optional)
• 1 tsp vanilla extract (optional)

Instructions

1. Place the dried peas in a bowl with 750ml of water. Soak overnight.

2. Drain and rinse the soaked peas. Add them to a saucepan with 750ml of fresh water. Bring to a boil over medium heat, then simmer for just over an hour until tender. Drain and discard the cooking water.

3. Place the cooked peas, pitted dates, and salt into the Mylky filter basket.

4. Fill the Mylky jug with water up to the 'Min' mark (1.3 litres). If using, add the oil and vanilla extract to the jug.

5. Your fresh pea milk will be ready in about a minute!
