Pistachio Overnight Oats

Prep Time: 5 minutes (and one night)

Servings: 2 servings

Ingredients

• Pulp from 1 batch of pistachio milk
• ½ cup (50 g) oats
• 2 tbsp (20 g) chia seeds
• 2 tbsp (30 g) maple syrup
• 1 tbsp (15 g) pistachio butter
• ¾ cup (180 ml) homemade pistachio milk
• ½ tsp (1 g) matcha (optional)

Toppings:
• 2 tsp (10 g) pistachio butter
• 50 g vegan white chocolate, melted
• 2 tbsp (20 g) chopped pistachios

Instructions

1. In a large bowl, add the oats, pistachio pulp, chia seeds, maple syrup, pistachio butter, and pistachio milk. Mix until combined.

2. Transfer the mixture to two cups.

3. Add the optional matcha and stir to combine.

4. Top each cup with 1 tsp of pistachio butter, cover with the melted chocolate, and finish with chopped pistachios.

5. Leave to chill for at least 3 hours or overnight. Enjoy!
