1. Preheat your waffle iron.
2. In a large bowl, mix the hazelnut pulp, grated carrot, plant-based milk, maple syrup, vanilla extract, and oil until the mixture is smooth.
3. In a separate bowl, whisk the oat flour, cinnamon, nutmeg, baking powder, and salt.
4. Combine all the wet and dry ingredients, stirring until just mixed. The batter should be thick but pourable.
5. Spoon the batter into the preheated waffle iron and cook for 5–7 minutes or until golden and firm.
6. Serve warm, optionally topped with vegan yogurt, nut butter, fruit, or a drizzle of syrup.
