Winter Granola

Prep Time: 10 minutes (plus baking time)

Servings: 3 servings

Ingredients

• 3 cups oats (270gr/7.2dl)
• 1 basket almond pulp from 1 batch of almond milk
• ½ cup maple syrup (160 gr/1.2 dl)
• ¼ cup coconut oil (55 gr/ 0.6dl)
• ½ tsp ground nutmeg
• ½ tsp cinnamon
• pistachios
• dried berries

Instructions

1. Preheat your oven to 150°C and line a baking sheet with parchment paper.

2. Press out as much liquid as possible from your leftover almond pulp.

3. In a mixing bowl, combine the oats, almond pulp, maple syrup, coconut oil, cinnamon, and nutmeg, and mix well.

4. Bake in the oven for approximately 40 min (or until completely dry), stirring the granola half way through for even baking.

5. Once done, stir in the pistachios and dried berries.

Store in an airtight container and enjoy!
