Summer Granola

Prep Time: 10 minutes (plus baking time)

Servings: 3 servings

Ingredients

• pulp from 1 batch almond milk, squeezed
• 160 g oats (2 cups)
• 75 g shredded coconut (1 cup)
• 160 g agave (½ cup)
• 55 g coconut oil (¼ cup)
• lime zest
• a handful cashews (30–40 g)
• 2 tbsp hemp seeds (20 g)

Instructions

1. Preheat your oven to 150°C and line a baking sheet with parchment paper.

2. Press out as much liquid as possible from your leftover almond pulp.

3. In a mixing bowl, combine the oats, shredded coconut, almond pulp, agave, coconut oil and lime zest and mix well.

4. Bake in the oven for approximately 40 min (or until completely dry), stirring the granola half way through for even baking.

5. Once done, stir in the cashews and hemp seeds. Store in an airtight container and enjoy!
