

Spooky Almond Pulp Truffles

1. In a large bowl, combine the almond pulp, peanut butter, agave syrup, almond flour, and carob or cacao powder. Mix well until everything is fully combined.
- If the mixture is too wet, add more almond flour.
- If it’s too dry, add a bit more peanut butter.
2. Roll the mixture into small balls with your hands. Gently press a candy eye into the center of each ball. Place the truffles in the fridge to chill while you melt the chocolate.
3. Melt the vegan chocolate in a heatproof bowl over a pot of simmering water (double boiler) until smooth.
4. Remove the chilled truffles from the fridge. Dip each truffle into the melted chocolate, covering about ¾ of the ball, leaving the eye visible on top. Place the truffles on a plate of parchment paper.
5. Allow the chocolate to harden by leaving the truffles at room temperature or placing them back in the fridge until fully set.
6. Your spooky almond pulp truffles are ready! Perfect for Halloween gatherings.
