Raspberries Chia Cups

Ingredients

• 40 g chia seeds (¼ cup)
• 240 ml homemade coconut milk (1 cup)
• Pulp from 1 batch of coconut milk (50–60 g)
• 1 tsp vanilla powder or vanilla extract
• 2 tbsp agave syrup (30 g)
• 50 g raspberries, mashed (⅓ cup)
• 1 tbsp vegan yogurt (15 g)

To serve:
• Extra vegan yogurt (for layering)
• Granola

Instructions

1. In a large bowl, combine the coconut milk, chia seeds, coconut pulp, vanilla, agave syrup, and mashed raspberries. Stir well until fully combined.

2. Let the mixture sit for about 10–15 minutes to allow the chia seeds to absorb the liquid and form a pudding-like texture. Stir again halfway through to prevent clumping.

3. Once thickened, layer a few spoonfuls of the chia pudding into serving cups or jars.

4. Top with a spoonful of vegan yogurt, and finish with a handful of granola.

5. Serve immediately or refrigerate for a few hours to chill.
