Mocha Balls (with Almond Milk Pulp)

Servings: 5 balls

Ingredients

• Pulp from 1 batch of almond milk (well-drained)*
• 1 cup packed soft pitted dates (about 220 g)
• 3 tbsp cacao powder (15 g)
• 2,5 tbsp finely ground coffee (7 g)
• 1/2 tsp sea salt
• 1/2 cup finely chopped dark chocolate or dairy-free chocolate chips (80 g)

Instructions

1. Add the almond pulp, dates, cacao powder, coffee and sea salt to a food processor. Blend until a thick, sticky dough forms. You should be able to press it together easily with your fingers.

2. Transfer the mixture to a bowl. Add the chopped chocolate or chocolate chips and mix until well combined.

3. Use your hands to roll the dough into 5 large balls. If the mixture feels too moist, add a bit of almond flour until it holds together

4. Optional: Roll each ball in shredded coconut or cacao powder for an extra touch.

Store in an airtight container in the fridge. Perfect for a quick energy boost or healthy snack!

* Use a spoon to press the pulp against the sides of the basket to squeeze out as much liquid as possible.
