Cinnamon Swirl Pulpmeal

Ingredients

• 80 g oats (⅔ cup)
• Almond pulp from your homemade almond milk
• 2 tbsp of brown sugar
• 1 tsp of vanilla
• 115 g vegan cream cheese (½ cup)
• 60 g powdered sugar (½ cup)
• A pinch of salt
• Ground cinnamon (adjust to taste)

Instructions

1. Start by combining your leftover almond pulp with oats, brown sugar, ground cinnamon, vanilla extract, and a pinch of salt in a mixing bowl.

2. Stir everything together until well combined and evenly distributed.

3. Prepare the frosting by whisking half a cup of vegan cream cheese with half a cup of powdered sugar in a separate bowl until smooth and creamy.

4. To assemble, spoon the cinnamon pulp mixture into a serving bowl. Using a frosting bag (or a spoon if you prefer), create a swirl of the vegan cream cheese frosting on top of the pulpmeal.

5. For a finishing touch, sprinkle a little extra brown sugar over the top to add a sweet, crunchy texture.
