1. Preheat the oven to 180ºC and line a baking sheet with parchment paper.
2. Add all the ingredients, except the plant-based milk, to a large bowl and mix to combine.
3. Add the plant-based milk and stir first with a spoon, then use your hands until a dough forms.
4. Roll the dough between two sheets of parchment paper and cut it with Christmas-themed cutters.
5. Place the cookies on the baking sheet and bake for 10 minutes. Let them cool completely before removing them from the tray. Decorate with melted dark chocolate.
